We are so grateful to No Fixed Address for the outstanding cuisine and service provided for our August 16th 2014 wedding reception to our 120 guests at the Queen Elizabeth Theatre Salons. Head Chef Stephen Duke delivered a really exciting and creative menu with an incredible range of delicious choices. Many of our guests frequent some of the top restaurants in Vancouver and they were raving about the calibre of the food.

It is impossible to pick a favourite because everything from the smoked sablefish and celeriac arincini with cavier to the pulled pork soft tacos with pineapple pickled jicame and cilantro was absolutely delicious. The beautiful visual presentation of each selection also helped add an air of sophistication to our evening . We wanted to provide high end food to our guests to make our day really special and because of No Fixed Address it was a huge success!

This is in reference to Steve Duke at No Fixed Address, we had a large wedding at the Van Dusen Gardens on the 11th of October, with 200 guests for a complicated and extensive menu. It was set up with as an unusual style of different food stations through out the room, with a variety of different foods at each station.

There was a crispy sushi station, a taco station as well as an Asian noodle and rice station consisting of vegetarian and meat dishes, assembled on the spot. Steve was very organized at each station having the perfect amount of help from his servers, and keeping the dishes warm and delicious!

Steve has a unique way of making the most interesting flavours that make even a fish taco taste like something you’ve never had before.

There was plenty of food and it kept coming all evening, the servers kept moving about the room with all the different hors d’oeurves, none of our guest we ever looking for food, it was plentiful.

The bar and alcohol was well managed through out the evening, and Steve had even gone the extra mile to have a signature drink for the bride, which everyone enjoyed.

I would highly recommend Steve to do a wonderful job with any function that requires a variety of wonderful flavours and an efficient way of presenting and serving everyone.

The proof is always with the guests who were raving about the wonderful service they experienced.

The set up before and the clean up after was done quickly and efficiently. Steve and his crew worked well as a team.

“A 190 person wedding is a big affair, with a lot of moving parts, and food is one of the most critical. Thankfully, from beginning to end Steve had everything under control. He came with a diverse menu and customized it to our liking. He visited and helped plan the space and progression of the food throughout the night.He took care of all the rentals, set up, and clean up. And this is to say nothing of the food.

We asked Steve to prepare a tapas menu, a series of small bites throughout the night that would allow everyone to move and socialize freely while still having a full meal. He prepared over fourteen delicious items served canapé style in addition to two food stations. It provided the perfect mix of substance and taste.

And, oh, the taste. Steve is truly a gifted chef. Roasted beets with avocado cream, hazelnut crumble and grapefruit. Soy ginger cured red spring salmon with chilli lime Creme fraiche, Thai basil and jicama. These were two of our favourites. All were balanced, flavourful, and beautifully presented A nice touch, was a midnight snack for the late night partygoers.

We would hire Steve again without a doubt and highly recommend No Fixed Address Catering!”

I’ve experienced Steve’s services twice, once at a small surprise birthday party and most recently at a post-wedding celebration at our house with a group of close to 50.

He was a hit with the guests and with me on both occasions – for the quality and originality of the menu items as well as for the professional, congenial manner he and his staff demonstrated in serving them. He was also very thorough in his menu planning, and came to the house to discuss all options with me well before the event date.

Steve and his crew prepared and served a sensational meal at our book club’s 2012 Christmas dinner party. As per our custom it was a black tie event, hosted on this occasion at my Point Grey home. Steve met with me several weeks ahead of time to discuss menu options, wine pairings and prices. We settled on a five course dinner for 16 people.

Steve next met with my wife at our house where he assessed the kitchen, took an inventory of dishes and flatware, decided on appropriate rental ware, and made recommendations regarding table setting.

Steve and his assistants arrived on time on the afternoon of the event and immediately set to work. By the time the guests arrived the house was filled with the aroma of fresh herbs and exotic spices.

The food was spectacular – each dish offering an unexpected texture, flavor and “heat”. Each course was preceded by Steve’s enthusiastic description of the local ingredients he had hand-selected and meticulously prepared.

The service was smooth and unobtrusive, a must for our speech-making group. On this particular occasion our evening was further complicated by an unexpected visit from members of the male choir, Chor Leoni, who serenaded us with carols. Steve and his crew managed to work seamlessly through the event. They coped brilliantly with the numerous interruptions, and served each course at just the right time, hot and cooked to perfection.

At the end of the evening we all agreed that a new standard had been set for our seasonal get-togethers and that Steve’s culinary creations were the defining element.

No Fixed Address Catering pulled off a virtuoso performance in catering a dinner party for fifty in our home, creating a warm and enduring memory for my husband and I and all of our guests that they are still talking about months later.

We first heard of Chef Steve after savouring his fare at a acquaintance’s summer dinner party. His creations were to say the least unique with a refreshing variety and combination of flavours. Being frequent hosts, we knew immediately that there was no further debate required as to who would cater our next party. Chef Steve’s prompt and complete response to our initial query was our first taste of his undisguised enthusiasm and love of what he does. Because he clearly listens to his client, he immediately created a unique culinary ensemble that perfectly fit our needs.

As the day of the event arrived, the overt professionalism and organizational skills of Chef Steve and his team at No Fixed Address exhibited up to that point allowed the worrier and micromanager in us to just relax, anticipate, and enjoy the evening that was about to unfold. All the details were taken care care of, from the moment his team arrived until our home was left in spotless condition at the end of the evening.

Even the most discerning foodies on our guest list were taken aback by the impact Chef Steve’s eclectic, yet cohesive assortment of canapés that including a duo of scallops seared with roast cauliflower puree and warm chorizo dressing or on a crispy corn fritter with cashew nut chutney and fresh mint, Vietnamese pork and eggplant ragout and the roasted beets with a light pickle sever with avocado cream, grapefruit and hazelnut crumble to name but a few. By using the amount of chatter created after the evening as the true meter stick, the cadenza of the evening’s performance had to have been the quartet of gourmet tacos, with the potato crusted Ling cod tacos with a chipolte remoulade, pickled cabbage and fresh cilantro served in a soft shell taco creating the greatest splash. The evening was rounded out by the soft tones dark chocolate mousse with raspberry coulis or sticky toffee pudding with a bourbon toffee sauce and whipped cream.

Chef Steve and No Fixed Address Catering created for our guests, a complete culinary experience that was truly without par and clearly raised bar for what we would hope to experience at any private expertly catered event that we might attend in the future . . . or we could just tell them to hire Chef Steve and not have to worry!
